we made this amazing three-cheese artichoke dip
to snack on while we watched
the final MLS game with David and Donovan...
here's what you'll need:
1 8-oz reduced-fat cream cheese (at room temp)
1/2 cup low-fat sour cream
1/4 cup grated Parmesan (1 oz)
3 tbsp fresh lemon juice
1 clove garlic, finely chopped
kosher salt and pepper
1 14-ox can artichoke hearts, rinsed, patted dry,
1 10-oz package frozen leaf spinach,
thawed and squeezed of excess moisture and chopped
4 oz extra sharp cheddar, shredded (1 cup)
pita or tortilla chips
heat oven to 425 degrees.
in large bowl mis cream cheese, sour cream, parmesan, lemon juice,
garlic, and 1/4 tsp salt and 1/2 tsp pepper
add artichokes, spinach and cheddar to bowl and combine.
transfer the mixture to a shallow 1-qt dish and bake
until light golden brown and bubbling
about 20-25 minutes.
