Dr. Oz's Skinny Muffins

Have you heard of these simple energy boosting muffins 
from Dr. Oz? 

Here's the recipe for one serving (you use a coffee mug and 
cook it in the microwave)...

Energy Boosting Muffins

1/4 cup ground flax
1 tsp baking powder
2 tsp cinnamon
1 tsp coconut oil
1 egg
1 packet stevia

Mix all ingredients together in a mug and microwave for 50 seconds. Allow to cool to a safe temperature and enjoy!

Clocks


My son was counting the clocks in our house
(aside from alarm clocks)
and I'm thinking I have an obsession?

Ruffled Lamp Shade


Add a super easy ruffle to a lamp shade...

All you'll need is a lamp shade, a few strips of muslin or cotton
(I didn't cut but tore the strips), and some hot glue...

start with a dot of hot glue and press down the fabric to begin,
then add a little more hot glue and press down another bit
gathering fabric as you go...

when the length of one strip ends just glue another gathered piece 
over where you left off, I like the unfinished edges on this...

what do ya think?

It's been an awesome week here!
Hope your week was great, too...

some pics from last weekend (a 5K in Arizona)

We stopped by the railroad tracks to write our names in rocks.
The kids have always wanted to do this after years of 
traveling this road...

ok, so we rarely see trains on this desert highway, and while we 
were constructing our names a train chugged by...
the conductor waved and blew his horn..the kids loved that! 

during the 5K
we slowed down just a bit (hehe) to take a pic at the last mile marker...

how gorgeous is this cloud with a "window" in the middle??
p.s. I didn't snap this shot, my passenger/photographer did
while we were on the highway...

Warm Glow


Although I sell and buy Scentsy (it's a good system),
I still adore a good candle! 
This is my old fave, and I just wanted to share it with ya!

Warm Glow Candles are ah-maz-ing!


My all time favorite is Evening Mocha, and there's a Scentsy that smells so 
similar (Mochadoodle)...but this is a great candle for the coffee table

Vegetarian Chili

Happy Wednesday! 
Here's What's Cooking today...

From Weight Watchers
Vegetarian Chili

Ingredients

Instructions

  • Heat oil in a large, nonstick, heavy-bottomed pot over medium heat. Add garlic; cook, stirring frequently, until aromatic, about 2 minutes. Add tomatoes, beans, corn, tomato sauce, chili powder, oregano, red pepper flakes, onion and pepper; stir well.
  • Increase heat to high and bring chili to a boil; cook, stirring frequently, until chili is thick and flavors are concentrated, about 5 minutes. Spoon into serving bowls and sprinkle with cheese. Yields about 1 1/4 cups chili and 1 tablespoon cheese per serving.

Notes

  • Use a heavy pot or the chili can burn easily. If it starts to stick to the pan, reduce the heat and stir constantly.

Little Books


I'm starting a poetry unit with my language arts classes
and I wanted a cute little book for the students to use
rather than lined paper...


To begin, you will need card stock for the covers and white copy paper for the inside pages, as well as a sewing machine (or a stapler if you want to just staple the edges).


after cutting the card stock and white paper in half assemble the books with card stock on the bottom and about 4-5 pieces of the white copy paper on top, then fold the papers in half for your "spine."

then simply sew down the crease to create a "binding"...


have your students decorate the covers and fill the inside pages with poetry terms
and examples of they types of poetry you are studying...
I'll be taking my stamps and stickers to school, the kids 
always love to decorate with craft supplies! 
You can use these little books for anything, even just
coloring books for your own littles.

Fresh Baked Cookies


Do you find that your cookies {homemade or store-bought}
don't keep that fresh baked taste for long?

well, here's a little tip from my father-in-law (a.k.a. Pappa)...

you'll just need a slice of bread and a container for your cookies

simply place the slice of bread at the bottom of the jar, container, 
or in a large ziplock bag

your cookies will keep that fresh baked taste and stay soft...
amazing! 

{the bottom cookie resting on the bread might get too soft, so you
can easily remedy this by placing a piece of wax paper over the
bread and then layer in your cookies}
