Lava Cake

So they say necessity is the mother of invention...
thus our version of Chocolate Lava Cake was born

all you need is~
1 chocolate cake mix and the stuff to make the mix
1 tub of chocolate frosting

all you do is~
mix and bake the cake according to directions, 
then take the bottom of a spatula or wooden spoon and poke
a bunch of holes in the cake as soon as it comes out of the oven

immediately glob on the whole tub of frosting in equal parts
all over the cake...


as quickly as you can, carefully spread the frosting all over 
(be light with the spatula so you don't pull up cake crumbs)

serve piping hot and top with your choice of ice cream! 

I've been making this cake for years after my daughter requested it
for her birthday waaaay back when. We all love it so much
it has become a family favorite, I hope you like it too!

Oh Happy Friday!

whooo hooo! it's Friday! hope you had a wonderful week:) 

the boys started reading as soon as we left
Barnes and Noble...love it!

Ricotta Pancakes

These Ricotta Pancakes are delish!!! 
I tweeked Giada's recipe a bit...

1 2/3 cups water
1-1/2 teaspoons vanilla
2 cups pancake/waffle mix (recommended:Krusteaz)
1 cup whole milk ricotta cheese

Combine the water and vanilla in a large bowl, add the 
pancake mix and stir just until moistened but still lumpy.
Stir in the ricotta but allow it to stay a little lumpy...
heat griddle to medium or 350...spoon 1/4 cup of batter 
for each pancake...cook until golden brown (about 3 min per side)



Giada's calls for a honey syrup and blueberries folded into the batter
but we used pure maple syrup and sliced up bananas on top! 

we might have a slight pancake obsession at our house? 
hey, they feed a crowd and are yuuummmmmmy!

The hubs and I had a date night recently, 
and normally I'd never veer off the beaten 
path and try this...but I did, it was amazing! 
I was so happy when I saw this recipe online,
just like our little Italian place...
